
A friend asked me recently for a salad recipe containing avocado and here it is. This salad is quick and simple (especially if you are using chickpeas from a can) and very nutritious. I love to combine fruits and vegetables in a salad – the fruit usually add sweetness which makes the salad more appealing to children especially (I know this from the frequent, constructively critical opinions from my own children!). The dressing also adds to the sweetness in this salad as it contains maple syrup. Maple syrup is one of the best Canadian imports I know and I am so glad it is so easy to find it in the UK these days! I drizzle it over pancakes and other breakfast foods and also use it in baking and salad dressings. It tastes so good no wonder Canadians even pour it over eggs for breakfast! Although it is essentially sugar, it does contains some minerals and antioxidants which makes it healthier than refined sugar. Enjoy!

Ingredients For the dressing
1 avocado (peeled), sliced or cubed 1 and 1/2 tablespoons pure maple syrup
1 red grapefruit, peeled, cubed 2 tablespoons good veg. oil
1 cup chickpeas (cooked, or from a can) 4 tablespoons lime juice
1/3 cup pistachios, crushed zest of 1 lime
2 tablespoons finely chopped coriander
Salt and pepper to taste

Avocados in salads are a blessing… and this one with chickpeas and grapefruit sounds interesting…I will try this for sure!
