Easy pasta dinners
Pasta is such a versatile ingredient you can combine it with virtually endless flavour combinations. It’s also a super convenient ingredient with a huge comfort food appeal, quick and easy to cook and perfect to enjoy any time of year. My latest pasta recipe I posted back in June was light, quick and easy to make, with a definite summer feel to it. This caprese orzo salad with pesto was light yet satisfying, full of herbs and refreshing, perfect as a pasta salad meal on a warm summer evening.
With autumn come comforting meals, warming and filling, which is also how I would describe this week’s featured recipes. All 3 are delicious autumnal pasta dinner ideas – hearty, satisfying plus super easy to make, which is a bonus with any recipe.

Jhuls from The Not So Creative Cook has shared her super speedy Filipino Tuna Adobo Pasta recipe, which comes together in as little as 15 minutes! How good is that? This easy pasta dish uses cupboard ingredients to create a gorgeously creamy, delicious sauce, which sounds fantastic served with the spaghetti. This is a great family meal idea for when you are in a hurry but still want to enjoy a freshly prepared homemade meal.
Jacqui from Recipes Made Easy has shared a delicious vegetarian pasta dish with a decisive autumnal character. Her Pasta with Roasted Pumpkin and Spinach contains a handful of ingredients, which together create a super delicious as well as healthy dish. What’s not to love about roasted pumpkin in a quick garlic and chilli sauce with toasted pine nuts for a bit of crunch, combined with a hot bowl of pasta? My idea of the perfect vegetarian pasta meal.
Tastebotanical has also shared a delicious autumnal meal idea in the form of Creamy Mushroom Pasta. Just like the other featured recipes this one is also very uncomplicated, using few ingredients to create a rich and creamy chunky sauce, perfect to serve with pasta. The addition of anchovies creates a really interesting dimension to this simple dish, no doubt adding depth and intensity of flavour.
