#CookBlogShare Week #2 Plus 4 Easy Healthy Vegetarian Meals
The start of each new year is a time of new beginnings and resolutions. We are usually sluggish from the holiday feasting and want to start the new year a little healthier. To celebrate new healthy beginnings I created this nutritious Beet Smoothie with Cherries and Kefir, which I shared a few days ago.
I’ve also been busy updating old content in order to bring you the best possible recipes you will love to make as part of a healthy diet. For example, I’ve updated my ever expanding collection of 15+ Easy Veggie Spaghetti Spiralizer Recipes. Now is the perfect time to dust off your spiralizer and enjoy healthier dishes throughout the day. Spiralizing is not just for salads! You can also use it to make main meals, soups as well as breakfast dishes. Check out this quick and easy turkey shepherds pie with spiralized potatoes or these breakfast eggs potato nests. My spiralized vegetable noodle soup is one of the most popular recipes on the blog!
I have also updated my collection of 10+ Best Healthy Vegetarian Pasta Recipes. Apart from recipes the post includes tips on how to make pasta dishes delicious as well as nutritious. I am a firm believer in pasta being good for us as long as it’s prepared the right way. Even comfort food can be made healthy!

Featured recipes are usually all very different but these 4 healthy vegetarian meals have something in common. They are all full of delicious flavours and aromas. Nothing like a vegetarian curry to tuck into on a cold winter’s night! They also include very clear and thorough instructions so you’ll have no trouble making them.
The features – 4 easy healthy vegetarian meals
First up is this Easy Squash Curry brought to the party by Michelle from Flipped Out Food. This zingy Thai inspired vegan curry is ready in just over 30 minutes. It contains lovely, warming spices and herbs including my absolute favourite – Thai basil, which no doubt seriously contributes to the overall deliciousness of this dish. Perfect to make this Veganuary!
These Spicy Chickpea Patties shared by Corina from Searching for Spice look gorgeous and sound even better! Corina used delicious curry flavours in her recipe and a completely fuss free method of making it, which is extremely appealing. You simply put all the ingredients in a blender and puree! This is the perfect weeknight healthy vegetarian meal idea.
Anna from Once Upon the Food Blog shared her Vegan Spanish Chickpeas with Spinach, also perfect for Veganuary. This fuss free dish comes together in as little as 20 minutes and contains smoked paprika, which is especially warming and delicious in a stew-like recipe. Anna’s post also contains interesting, useful information on healthy ingredients.
Last but certainly not least is this Paneer Jalfrezi (Restaurant Style Curry), shared by Geetha Priyanka from Flavours Treat. This delicious classic tomato based vegetarian curry dish contains a very generous amount of green chillies – a total of 6! Definitely not for the faint hearted. But absolutely delicious!
