These healthy 5-Ingredient Blueberry Cream Cheese Dessert Pots are a super simple make ahead dessert, perfect for entertaining as well as for everyday!
Healthy blueberry cream cheese dessert
I love making desserts and I love making them healthy. I usually do this by keeping the sugar and/or fat content as low as possible without compromising on taste.
This 5-ingredient blueberry cream cheese dessert is low in sugar although I did use full fat cream cheese. I find low fat or fat free dairy products a little acidic, which isn’t always ideal in dessert recipes.
That’s why I chose to use full fat cream cheese in this recipe. As it’s the only ingredient containing fat this blueberry dessert recipe still ranks quite high in the healthy dessert category.
Easy blueberry dessert
When it comes to easy desserts blender dessert recipes are definitely at the top of the list! They are at the top of my list anyway. What could be simpler than tossing all the ingredients into a blender and blitzing until smooth!
This blueberry cream cheese dessert is almost as simple as that.
There is an additional little step you need to do before you place the ingredients in your blender. You will need to briefly cook the blueberries (fresh or frozen), along with the sugar, in a pan over a high heat for a few minutes. This will release more sweetness from the blueberries.
After 5 minutes of bubbling up your mixture will look like this:
Allow the mixture to cool a little, then blitz together with the 3 remaining ingredients.
Spoon equal amounts of the mixture into 4-5 little pots/ramekins, refrigerate for at least 30 minutes and enjoy!
This healthy blueberry cheesecake dessert has a velvety smooth texture and light and fluffy, mouse-like consistency. You will need to use a really good blender in order to get these results.
