This delicious avocado cheese toast with ricotta is a simple and nutritious savoury breakfast or snack idea that comes together in under 10 minutes. It's high in protein so will keep you full for longer!
This avocado cheese toast is a guacamole breakfast of sorts with added ricotta as well as plenty of texture since the avocado is cubed rather than mashed. This recipe is extremely versatile and you can easily tweak the ingredients to create your favourite mix - see Extras below.
Ingredients
Because I am using chunks of avocado as well as fresh herbs in this recipe I needed an ingredient that would bind the mixture and add creaminess. I chose ricotta as it's naturally low in fat (ideal to pair with calorific avocado) plus it adds protein which makes this avocado cheese toast a truly satisfying breakfast.
I also added scallions (spring onions) and cilantro (fresh coriander) for freshness and added texture, a little oil and plenty of lime juice and simple seasoning to bring all the flavours together. Serve with your favourite bread, scatter chia or black sesame seeds on top and enjoy!
What avocado to use
I am using the Hass variety but you can use any avocado as long as it's ripe but still firm so it doesn't disintegrate when you chop it.
Top tip
I like lots of texture in my avocado toast filling but you can mash the avocado with a fork before combining with the other ingredients (a ripe and soft avocado would work better here).
How to make avocado cheese toast
1. Chop the avocado, cilantro and green onions and combine with the ricotta, oil and lime juice.
2. Season to taste and stir thoroughly.
3. Toast your bread until firm and lightly browned and place a desired amount of the avocado mixture on top. Enjoy!
Serving suggestions
Place a desired amount of the avocado cheese mixture on top of your toast and scatter some black sesame seeds or chia seeds. It will add extra goodness and more of a dramatic look to your morning toast!
The avocado ricotta mixture tastes delicious with any bread so use your favourite. (I like to use brown, seeded or rye). If you swap bread for crackers you can also enjoy the avocado ricotta mixture as a dip.
It's also delicious with chicken, turkey or salmon (especially smoked!) sandwiches.
Substitutions
- Ricotta: try cottage cheese, fromage frais/fromage blanc or mix a bit of feta into the filling instead - if using these last 2 ingredients you won't need to add any lime juice.
- Lime Juice: use lemon juice if preferred.
- Scallions: substitute fresh chives.
- Cilantro: substitute fresh basil or parsley.
- Vegetable oil: if you prefer olive oil I recommend a mild tasting variety so it doesn't overpower the other ingredients.
- Fine sea salt can be replaced by sea salt flakes or Himalayan pink salt (I like to sprinkle these on top rather than stir into the mixture).
Can I make this recipe ahead
Yes, but not more than 2-3 hours ahead (keep it refrigerated in an airtight container). I do not recommend making it the night before as the mixture may not taste as fresh the next day.
Extras
This avocado and cheese toast can be served with additional toppings so you can enjoy it with a different twist every time. These include:
- Slices of tomato or radish
- Roasted tomatoes or red peppers
- Toasted sunflower seeds
- Chili flakes or finely chopped jalapenos
- Smoked paprika
- Poached egg for an even more satisfying breakfast
- Spoonful of sun dried tomato pesto

- Use ripe but firm avocado so it doesn't get mushy when you combine it with the other ingredients.
- Tweak the ingredients to suit your preference.
- Best served immediately. Leftovers can be refrigerated for up to 3 hours.

Avocado Ricotta Cheese on Toast
Ingredients
- 2 medium avocados ripe but firm, finely chopped, I used Hass
- 5 tablespoons ricotta firm, thoroughly drained
- 1-2 tablespoons lime juice or to taste
- 2 teaspoons vegetable oil
- 2 scallions/spring onions finely chopped

- Sea salt and pepper to taste
- Your choice of bread I used rye but you can use any

- Toast your bread until firm and lightly browned and spoon a desired amount of the avocado mixture on top. Scatter sesame or chia seeds on top and enjoy! Keep any unused amount of the mixture in the fridge in an airtight container for up to 3 hours.
