THE FEATURES – 3 FABULOUS VEGAN DINNERS
As always we had a delicious selection of both sweet and savoury dishes last week – if you haven’t seen it hop over to Recipes Made Easy and check out all the yummy recipes linked up last week!
This week’s theme is 3 Fabulous Vegan Dinners. They all sound super delicious, are very healthy (which for me personally always has an extra special appeal) and look absolutely gorgeous. Just take a look↓
First up is this stunning looking Sweet Potato Veggie Burger from Looney For Food. It is not only gluten and dairy free, but also egg free, soy free and sugar free – I can’t imagine a more allergen free burger! Patrick has managed to create a nutritious and delicious oven baked burger with only a handful of ingredients, which most of us probably have in our cupboards right now! That to me is the perfect everyday healthy recipe:)
Jess Eats and Travels shared her Argentinian-Inspired Veggie Chilli with Chimichurri, which is packed full of gorgeous flavours and veggie goodness! It’s ‘a throw everything in one pot sort of meal’, which is my ideal easy weeknight dinner idea. Jess shared not only her delicious recipe in the post but also some interesting facts about Argentinian gastronomy! Do hop over and check out her post!
Last but certainly not least is this sensational Colcannon-Topped Vegan Shepherd’s Pie from The Veg Space. This truly is vegan comfort food at its best – great flavours, hearty filling topped with the prettiest mashed potato mixture I’ve ever seen! Thanks to Kate I now know what Colcannon is! This recipe is also super easy to make, do check out the link (above) for instructions.
