#CookBlogShare Week #36 Plus 4 Courgette Recipes
Welcome to another #CookBlogShare link party, where we share recipes, comment on each other’s cooking creations and generally immerse ourselves in the world of gastronomy! Thank you to everyone who shared their recipe with us last week.

THE FEATURES
Deciding on the features is not an easy task so whenever it is my turn to host #CookBlogShare I first consider focusing on a seasonal theme – if there aren’t enough recipes in this category I look at alternative theme options (dessert, side, main, vegetarian, etc). Last week we had as many as 5 courgette recipes (including my Peanut Hoisin Zoodle Chicken🙂 so this week’s theme is very seasonal!
4 COURGETTE RECIPES
First up is a fantastic looking Vegan Chocolate Chip Courgette Cake from The Peachicks Bakery. Not only is this a healthy dessert recipe, including a vegetable AND chia seeds, it is perfect for freezing so you can enjoy an individual slice whenever you like or even pop it in your child’s lunchbox! Yummy and resourceful too:)
These delicious Courgette Cupcakes with Lemon Curd and Cream Cheese from Curly’s Cooking are another scrummy dessert recipe using a vegetable (because vegetables are so wonderfully versatile)! These zesty, healthy cupcakes would also make a great lunchbox snack.
This Brilliant Bacon & Courgette Pasta from Nic’s Adventures is a quick and delicious weeknight dinner idea, ready in less than 30 minutes. It’s rich, full of veggies (not just courgette!), and uses spelt pasta, which I never tried before – I need to examine the pasta aisle in the supermarket more closely:)
This Creamy Broad Beans, Courgette & Broccoli Pasta from Jo’s Kitchen Larder is another delicious, weeknight dinner idea. This fuss free vegetarian meal is super simple, full of veggie goodness and if you are counting calories this might be the perfect meal idea for you as it uses Mascarpone Light, rather than the full fat kind.

Isn’t great that veggies can be included in bakes besides main meals too! I’m really inspired to try courgettes in a bake, it’s something i’ve never tried and yet I hear such great things about them!

Fab choice of theme! So lovely when you can get a seasonal theme out of the entries. And they all look super yummy. Think my fave has to be Jo’s pasta. Sounds healthy but looks so indulgent AND ready in less than 30 minutes – whoop whoop!! Eb x
