    Cheesecake Balls 2 Ways (Strawberry, Mango)

    No-bake cheesecake balls make a delicious party dessert.  They come together incredibly quickly and can be made ahead using lots of different flavour combinations. This post offers 2 flavour possibilities: strawberry and white chocolate as well as mango.

    Why you will love these cheesecake balls

    • Simple. They are made using a handful of ingredients.
    • Quick and easy. You don't need to bake them so they come together in minutes.
    • Low in fat and sugar: There is no heavy cream and the amount of sugar is quite moderate.
    • Make ahead: They can be made ahead so are perfect for entertaining or as a healthier treat any time.

    1.Strawberry cheesecake bites ingredients

    These 5-ingredient strawberry cheesecake balls contain a magic ingredient that’s responsible for making this dessert taste like a punnet of fresh strawberries.  Better actually. It's freeze dried strawberries!  They are basically dehydrated strawberries so all that’s left in them is delicious, concentrated strawberry flavour.  Which makes them ideal to use in recipes requiring flavour without the moisture. 

    I used 2 types of freeze dried strawberries in this cream cheese dessert: chopped as well as powdered.  The powdered form adds colour and distributes the flavour evenly.  But I also wanted bits of fruit in the mixture, which is why I used chopped freeze dried strawberries, too.  

    These cheesecake balls also include cream cheese, white chocolate for sweetness and added flavour and almond flour (ground almonds) for binding.

    2. Mango cheesecake balls ingredients

    These cheesecake bites contain 4 ingredients.  The main ingredient is dried mango.  I pureed the mango then combined it with cream cheese and almond flour to help bind the mixture. I used crushed pistachios for coating.

    These simple mini mango cheesecake bites have no added sugar!  There was no need to add any as dried mango is naturally quite sweet. 

    What to use for coating 

    For the strawberry balls I recommend using white chocolate shavings. They really enhance the flavour of the strawberries. The mango cheesecake balls can be coated in crushed nuts (such as unsalted pistachios), desiccated coconut or almond flakes.

    Step-by-step recipe instructions

    1.To make the strawberry balls place all the ingredients in bowl (reserve approximately half of the chocolate for coating).

    For the mango balls place the mangoes in a blender and process until the mixture becomes crumbly with larger pieces visible. Add the cream cheese and the ground almonds and puree (you can do this in a bowl using a hand blender) until smooth.

    While chocolate shavings, cream cheese, chopped freeze dried strawberries and spoon in purple bowl.

    2. Stir the strawberry mixture thoroughly until well combined and smooth. Refrigerate both mixtures for 30 minutes (it will be easier to work with).

    3. For the strawberry bites place the remaining chocolate shavings on a large plate, form balls and roll in the chocolate. 

    For the mango balls use crushed pistachios for coating (when forming the balls you can sprinkle a little water on your hands so the mixture doesn't stick to them).  Chill your cheesecake balls for 30 minutes before serving if possible.

    Top tips 

    • For best results use good quality white chocolate.
    • Freeze dried strawberries and strawberry powder are available in all the large supermarkets in the baking aisle.  You might also be able to find them in healthy food stores.  They are not cheap but worth every penny, I promise you!
    • If, however, you can’t get both of these products just use one, and add more of it to suit your taste.  
    • I used full fat Philadelphia cream cheese in this recipe but you can use the low fat variety if you prefer.
    • When you are buying your dried mangoes look for a brand that has no added sugar
    • Chill your cheesecake balls mixture for 30 minutes before forming the balls. Also if possible chill the balls for 30 minutes before serving. 
    • Storing: Keep refrigerated in a closed container or bowl covered with cling film for up to 2 days.
    • Freeze for up to 3 months.

    Substitutions

    • Cream cheese: I used full fat cream cheese but you could use reduced-fat cream cheese if you prefer.
    • Freeze dried strawberries: You can use sliced freeze dried strawberries if you can’t get the chopped variety.  Just chop them up before adding into the cheese mixture.

    How many balls will I get

    You should get approximately 12 strawberry balls and 14 cheesecake balls.

    Ingredients

    Strawberry and White Chocolate Cheesecake Balls

    • 4 teaspoons strawberry dust powdered freeze dried strawberries
    • 0.25 ounces (7 g) freeze dried strawberries chopped
    • ¾ cup+2tbsp (190 g) full fat or reduced fat cream cheese I used Philadelphia, 6.7oz
    • 3.53 ounces (100 g) white chocolate coarsely grated
    • ⅔ cup (80 g) almond flour/ground almonds 2.82oz

    Mango Cheesecake Balls

    • 5.64 ounces (160 g) dried mango chopped
    • ¾ cup+2tbsp (190 g) full fat or reduced fat cream cheese 6.7oz
    • 1 cup less 1tbsp (100 g) almond flour/ground almonds 3.53oz
    • 3 tablespoons crushed unsalted pistachios for coating

    Instructions

    • For the strawberry balls combine the cream cheese with strawberry dust and chopped freeze dried strawberries, ground almonds and approximately half of the chocolate shavings.
      Stir thoroughly until the mixture is smooth. Refrigerate for 30 minutes (chilled mixture is easier to work with). Form balls and coat in the remaining chocolate shavings. Yields approx. 12 balls. Keep refrigerated.
