QUINOA FOR BREAKFAST
Every time I use quinoa in my cooking (and that’s often!) I am amazed at how versatile it is. It can be used in sweet and savoury dishes, hot and cold dishes, spicy and plain dishes – the list is endless. You can even start your day with the quinoa. As a good source of protein, fiber and other wonderful stuff quinoa is in fact an ideal energy boosting wholesome breakfast food.
This simple Quinoa for Breakfast recipe idea takes seconds to prepare if you’ve got cooked quinoa in your fridge like I do most of the time. Just in case.. (once cooled, cooked and drained quinoa can be kept in the fridge for up to 3 days).
I used blueberries in this recipe but you can use any fruit you like.
This breakfast idea is light yet satisfying, tastes divine and looks fabulous. Treat yourself to a fuss free breakfast in style!

- 4 tablespoons cooked and chilled quinoa
- 2 tablespoons quark or yogurt
- 2 tablespoons toasted seeds I use sunflower and flaxseeds but you can use any
- 2 tablespoons fresh blueberries
- Cinnamon/cocoa for sprinkling and maple syrup for drizzling.
Combine all the ingredients, sprinkle with cinnamon (or cocoa), drizzle with a little maple syrup and enjoy.
