Plant-based charcuterie ingredients and substitutions
- The new Quorn Deli Slices Range including: Quorn Roast Beef Style Slices, Quorn Yorkshire Ham Style Slices, Quorn Finely Sliced Ham Style Slices and Quorn Roast Chicken Style Slices.
- Fruits: add colour. Use both fresh and dried (such as prunes and cranberries). I recommend using fruits that don’t discolour quickly (which is why I omitted apples and pears and opted for grapes and blackberries instead). I also used fresh figs (you can also add dried) and thinly sliced melon.
- Vegetables: add colour, texture and complement the meat-free slices. Use both fresh and pickled. Suitable vegetables currently in season include radishes and carrots which can be served raw, as well as beetroot, which is best served pickled.
- Nuts and seeds: add crunch. I used walnuts and typically autumnal pumpkin seeds but you can use your favourite.
- Crackers/breadsticks.
- Olives and gherkins: delicious with the meats.
What other ingredients can be used
- Vegan cheese.
- Thinly sliced baguette: this takes up quite a bit of space so you can serve it in a separate dish on the side.
- Chutneys: try apple, beetroot or cranberry.
- Dips and sauces: beetroot is an autumn vegetable and both beetroot hummus as well as horseradish beetroot are delicious with the meatless slices.
Vegan charcuterie board components
Flavour: make sure you combine a wide range of flavours from savoury (your meat-free Quorn Deli Slices are great for this) to sweet, sour (that’s your fruit, veg and pickles etc) and salty (crackers, pretzels etc.).
Texture: use ingredients which offer contrasting textures, such as soft, crunchy, juicy etc.
Colour: the visual aspect of a grazing platter is just as important as the flavours and textures you use. I recommend using a mixture of colours that stand out and make your food look as good as it tastes!
What you will need
A large, sturdy wooden board.
Small dishes (bowls, ramekins etc) for seed, pickled foods or small dried fruits.
Charcuterie utensils, nutcracker (if needed) etc.
Assembling autumn charcuterie board
1. Start by folding and arranging the vegan deli style meats down the centre of your board away from the edges. Prop them up with mini pumpkins (or other autumnal decorative elements), small dishes or sturdy ingredients to help hold them in place. Your platter will look better if you separate the meats with other ingredients.
2. Add the rest of the ingredients filling any gaps with berries, dried fruit or other small foods. Enjoy!
Top tips for making vegan charcuterie
- I recommend removing the deli style meats from the fridge 30 minutes before assembling the board (they will be easier to fold and arrange on the board).
- The Quorn Deli Slices can be folded any way you like depending on your preference as well as the size/shape of your serving board.
- Use ingredients that don’t dry out or discolour quickly.
- Make sure your olives and prunes (if using) are pitted.
- Arrange the ingredients close together to save space and make your board look more appealing.
- If using ingredients that may release moisture (such as gherkins, pickled beets etc) place them in separate dishes to avoid contact with the other ingredients.
- Your vegan charcuterie can be left uncovered on the table for up to 3-4 hours.
- Not suitable for freezing.
