Pistachio Crusted Fish with Lime (Gluten Free)

  • 600 g salmon/cod/halibut, boneless, tail end works well
  • 100 g pistachios weight without shells, lightly crushed
  • 30 g butter melted
  • 1 lime juice and zest
  • Sea salt and white pepper to taste


  • Line a baking tray with parchment paper, place the fish on top, season and drizzle with the juice of half a lime. Set aside for at least 30 minutes.
  • Preheat the oven to 400 F/ 200 C/ gas mark 6. Combine the crushed pistachios with the melted butter, stir thoroughly and spread the mixture over the fish. Bake in the middle of the oven for 15-20 minutes.
  • Remove from the oven, scatter the lime zest over the top, drizzle with more lime juice and serve.


Preparation time DOES include the time needed to marinate the fish in lime juice.
