This 4-ingredient Pistachio Crusted Fish with Lime (Gluten Free) requires very little effort yet is a delicious and stunning looking dish, perfect for sharing with family and friends whatever the occasion.
600gsalmon/cod/halibut,boneless, tail end works well
100gpistachiosweight without shells, lightly crushed
1limejuice and zest
Sea salt and white pepper to taste
Line a baking tray with parchment paper, place the fish on top, season and drizzle with the juice of half a lime. Set aside for at least 30 minutes.
Preheat the oven to 400 F/ 200 C/ gas mark 6. Combine the crushed pistachios with the melted butter, stir thoroughly and spread the mixture over the fish. Bake in the middle of the oven for 15-20 minutes.
Remove from the oven, scatter the lime zest over the top, drizzle with more lime juice and serve.
