Cauliflower Rice Patties with Cheese

These simple, healthy Cauliflower Rice Patties are made using raw cauliflower and a moderate amount of cheese (plus a few extra ingredients to help bind the mixture)- all you need is a blender and about 20 minutes of your time!

  • 1 medium cauliflower roughly chopped
  • 1 cup grated mature cheddar cheese or other strong cheese
  • 4 tablespoons cilantro finely chopped
  • 1 heaped teaspoon smoked paprika
  • 1 garlic clove finely chopped
  • 1/2 teaspoon turmeric
  • 1 teaspoon cayenne pepper
  • 1 teaspoon fine sea salt
  • 4 tablespoons breadcrumbs
  • 4 tablespoons olive oil for frying


  • In a blender process the cauliflower, garlic and cilantro to obtain a crumbly mixture.  Add the smoked paprika, turmeric, cayenne pepper, salt, cheese and 2 tablespoons of the breadcrumbs and puree again until the mixture is no longer crumbly.   
  •  Form round patties and coat in the remaining breadcrumbs.
  • Heat up a little oil and fry the patties over a medium heat for 2 minutes on each side. Avoid overcrowding the pan and work in batches if necessary. Enjoy hot or cold.
