Lime Muffins with Chocolate Chips

These zesty lime muffins with chocolate chips make a delicious breakfast on-the-go or snack.  They are fluffy, deliciously refreshing and simple to make.

Ingredients

  • 320 g flour (2.56 cups)
  • 2.5 tsp baking powder
  • 100 g sugar (0.5 cup)
  • 100 g dark chocolate chips
  • 1/6 tsp fine sea salt
  • 60 ml lime juice
  • zest of 3 limes
  • 2 medium eggs
  • 70 ml vegetable oil
  • 240 ml semi-skimmed milk

Instructions

  • Preheat the oven to 400 F/200 C/ gas mark 6.  Lightly grease or line a muffin pan with 12 cases.
  • In a large bowl combine the flour, baking powder, sugar, salt and chocolate chips and stir thoroughly using a whisk.
  • In another bowl whisk together the eggs, oil, milk, lime juice and zest until smooth. Pour in the dry mixture all at once and stir just to combine. Do not overmix the batter.
  • Spoon the mixture into the muffin cases.  Bake for 23 minutes in the centre of the oven.  Remove from the oven and set aside for 10 minutes then transfer the muffins onto a rack.

Notes

  • Do not overmix the batter. Stir just to combine.
  • You can swap the dark chocolate chips for milk chocolate chips or sultanas.
  • Best served warm. Store leftover muffins, once completely cooled, in an airtight container for up to 3 days.
  • Freeze for up to 3 months.
