This simple, zesty Dairy Free Coleslaw with Pomegranate is a combination of sweet and savoury flavours which work together beautifully creating a delicious coleslaw with a twist - only 6 ingredients, vegan and gluten free!

Ingredients

  • 1/3 small cabbage grated                                       
  • Seeds of 1 large pomegranate                                
  • 3 tablespoons finely chopped dill                          
  • Salt and pepper to taste
  • 4 tablespoons lime juice plus zest of 1 lime
  • 3 tablespoons good vegetable oil

Instructions

  • Combine the juice and zest of lime with the oil and set aside.
  • Combine the salad ingredients, pour in the dressing, stir and serve!
